Baked corn



Ingredients:
2 eggs
2 Tablespoons of sugar
2 Tablespoons of flour
4 Tablespoons of melted butter
1 can of creamed corn
1 cup of milk
1/2 tsp. salt

Whisk all ingredients together and pour in a casserole pan.
Bake at 400 deg until it starts to brown then reduce heat to 325 deg
Bake for 1 hour.

This is something my Mother used to make and I just love it! Enjoy!

Turkey Burgers

Turkey Burgers

1/4 - 1/2 cup finely chopped onion, depending on how much you like onion
1 Granny Smith Apple finely chopped, or use whatever you have on hand
20 oz package of ground turkey
2 tsp salt 
2 tsp Chipotle Tabasco,this type of Tabasco has a milder Smokey flavor 
1 tsp black pepper
2 tablespoons of lemon juice 
2 tablespoons of dried parsley  

Saute the onions and apple in olive oil until tender, let cool. Mix the remaining ingredients and sauteed items together. Shape into burgers. Place in preheated and oiled pan or grill. Cook burgers for about 7 min per side. Serve with your favorite rolls, cheese, condiments, lettuce or tomato.

Ham and Spinach Quiche


Ham and Spinach Quiche

1 Pie crust -homemade or store-bought
1 Cup chopped ham 
1 Cup chopped onion 
1 pkg frozen chopped spinach (8-10oz)
5 Large eggs
1 Cup milk
1 Cup shredded cheese



Place pie crust in pie pan. Bake in preheated 425 deg oven for 5 min., remove from oven. Set aside.

Place spinach in microwave on high for 6 min., remove and drain. Place ham and onion in pie crust.

Mix together eggs, milk and cheese. Add spinach and pour into pie crust onto of ham and onion. Bake for 15 min at 425 deg. Then bake at 300 deg for 30 min. You may have to cover with foil to reduce browning on the top. Let stand for 10 before cutting into wedges. 

I usually double the recipe and make 2. Great for lunch the next day and you can always freeze and reheat at a later date.

This is absolutely delish!! The hubby and kids all love it!
